Bran Muffins

Yield: 12 muffins



1/2 c AM Wheat Bran
1/2 c Boiling water
1/2 c Raisins
2 ts Orange peel, grated
1 Egg; beaten
-OR- egg replacer
1/4 c AM Unrefined Vegetable Oil
2 tb Molasses, unsulphured
2 tb Raw honey
1 c Buttermilk
1 c AM Wheat Bran
1 c AM Whole Wheat Flour
1 ts Ground cinnamon
1 1/2 ts Non-alum baking powder
1/4 ts Sea salt (optional)



Combine the 1/2 cup bran, boiling water, orange peel and raisins. Let stand 5 minutes. Combine egg, oil, molasses and honey; mix until blended. Add buttermilk; mix well. Add the 1 cup bran and the bran-water mixture. Stir together the whole wheat flour, cinnamon, baking powder and salt. Add the dry ingredients to the bran mixture; stir just until blended. Fill greased muffin cups, 3/4 full. Bake at 375 F. for 18-20 minutes.
