Raspberry Applesauce

Ingredients:

• 3 lbs. apples
• 1 (12 oz.) bag frozen raspberries or 1 1/2 pt. fresh raspberries

Preparation:

Peel and core the apples. (Try and use sweet apples like McIntosh or Rome.) Cut the apples into 1 inch chunks. Place the apples in a heavy saucepan with 2- 3 tablespoons of water. Cover and cook over medium heat until the apples are soft (approximately 30 minutes), stirring occasionally. Add the raspberries and cook for another 10 minutes. Remove from the heat and puree the sauce in a food processor. Strain the applesauce to remove the seeds. Serve warm or refrigerate. May be used as a side dish with meat or poultry or as a sugar-free dessert.
