Sweet Potato Biscuits



Ingredients:

2-3/4 cups all-purpose flour
4 tsp. baking powder
1-1/4 tsp. salt
tsp. ground cinnamon
tsp ground nutmeg
2 cups sweet potatoes (peeled, cooked, mashed)**
cup sugar
cup butter/margarine, melted
1 tsp. vanilla extract
cup chopped nuts (i.e., pecans) optional



Preparation:

Preheat oven to 450 degrees; lightly grease a baking sheet.
1. Combine dry ingredients in a large mixing bowl: flour, baking powder, salt, cinnamon, nutmeg.
2. In another bowl, combine sweet potatoes, sugar, butter and vanilla. Add to flour mixture and mix well. Add nuts, if desired.
3. Turn onto a lightly floured surface; knead slightly. Roll dough to -in. thickness.
4. Cut with a biscuit cutter (2-1/2 in. circles) and place on lightly greased baking sheets.
5. Bake at 450 degrees for 12 minutes or until golden brown.
