Peanut Biscuits


1 egg
pinch salt
4 oz butter
2 tsp cocoa
1/2 cup sugar
3 oz shelled peanuts
1/2 tsp vanilla essence
1 3/4 cups self raising flour


Cream butter and sugar until light and fluffy then add egg and vanilla then beat well. Stir in the nuts and add the flour with cocoa, salt and add to cream mixture mixing well. Place teaspoonfuls on a greased biscuit tray allowing a little room for each to spread. Bake the Peanut Biscuits in moderate oven 350 degrees for 20 minutes. Remove to a wire cooler and cool thoroughly before storing in an airtight container.
