Carrot Apple Coffee Cake


1 c. non-cholesterol oil
4 eggs
1 c. grated carrots
1 c. grated apples
20 oz. can pineapple
2 tsp. baking soda
1 tsp. cinnamon
1/3 tsp. nutmeg
1/4 tsp. ginger
1 tsp. vanilla
1 c. coconut
2 c. whole wheat flour (may use white flour)
1/2 c. walnuts
1/2 c. raisins


Mix ingredients in order given. Bake in a 9 x 13 inch loaf pan for 45 minutes at 375 degrees. Check with toothpick to see if cake is done. Lower heat to 325 degrees for 15 minutes more. Cut apples and carrots in small pieces and put in blender.
