Reggie's Carrot Cake


1 1/2 c. vegetable oil
1 1/2 c. sugar
4 eggs
2 c. flour
2 tbsp. cinnamon
1 tbsp. nutmeg
1 tsp. salt
2 tbsp. baking powder
1 tbsp. baking soda
1 c. raisins (opt., may use less)
1 c. carrots, shredded
3 lg. Granny Smith apples, diced


Mix in bowl the oil and sugar. Then stir in eggs. Next add flour, cinnamon, nutmeg, salt, baking powder and baking soda. Blend well. Add raisins, carrots, and apples; blend well. Pour into well greased and floured pan. I use a 10" springform pan, or two bread pans.

Preheat oven to 350 degrees. Bake for at least 1 hour, until toothpick inserted in center is clean.
