Carrot Fruit Cake


3 c. flour
2 tsp. baking powder
1 tsp. salt
2 c. sugar
1 tsp. baking soda
1 c. broken nut meats (optional)
1 1/2 c. salad oil
1 tsp. vanilla
3 eggs, beaten
2 c. grated carrots
1 c. coarsely chopped apples
1 c. crushed pineapple, well drained


Sift together first 5 ingredients; set aside. Add nut meats. In a large bowl, place oil and vanilla and well beaten eggs. Beat 2 minutes. Add carrots, apples, and well drained pineapple. Stir until ingredients are well combined. Add half of the dry ingredients at a time to the fruit/vegetable mixture. Beat well. Grease and flour large angle food cake pan. Spoon cake mixture into pan. Bake in preheated oven at 350 degrees for 1 hour.
