Mile's Carrot Cake


4 eggs, beaten
2 c. sugar
1 1/4 c. oil
2 c. flour
2 tsp. soda
2 tsp. cinnamon
1 tsp. nutmeg
1 tsp. allspice
3 c. grated carrots, packed
1 c. crushed pineapple
6 oz. floured raisins
1 tsp. vanilla
1 c. walnuts, chopped


Beat eggs and sugar until fluffy; add oil a little at a time. Beat at high speed. Add flour, soda, and spices; mix until smooth. Add carrots, pineapple, raisins, vanilla, and walnuts. Put in a greased, floured angel food cake pan. Bake at 350 degrees for 45-90 minutes (when toothpick inserted comes out clean). Cut into two layers. Frost with cream cheese frosting.
