Coconut Cod Curry
Ingredients:
• 12 oz fillets of or cod.
• 3 hot chilis, chopped.
• 2 garlic cloves.
• 1 large onion, finely chopped.
• 1 stalk of lemongrass, finely chopped.
• 1 1/2 cups of coconut milk.
• 2 tablespoons of cooking oil.
• 2 teaspoons of turmeric.
• 1 teaspoon of honey.
• 1 teaspoon of shrimp paste.
• Juice of 1/2 a lemon.
• Salt and freshly ground black pepper, to taste.
• Whole coriander leaves.
Preparation:
Dice the code into one-inch cubes.
In a food processor, blend the chillies, garlic, onion, turmeric, honey and shrimp paste until smooth
In a wok or suitably sized frying pan, heat the cooking up and cook the paste for about 3 minutes, stirring constantly.
Add the coconut milk and chopped lemongrass, then bring to the boil and cook for 5 minutes.
Add the code and cook for a another 7 minutes.
Season with the lemon juice, salt and black pepper.
Serve with whole coriander leaves.
