Hot Cottage Cheese Balls


1 c Cottage cheese
1/2 ts Salt
2 tb Tomato catsup
1/2 ts Grated onion
1 Egg white, beaten
Cracker crumbs


Press cottage cheese through a sieve; add seasoning, fold in stiffly beaten egg white and form into tiny balls, using about 1 tsp for each. Roll in finely crushed cracker crumbs and fry quickly in hot oil, 390 degrees, until golden brown. Drain and serve hot as hors doeuvres or as a salad accompaniment.
