1 c Cheddar, grated (4 oz)
1/2 c Cottage cheese
1/2 c Red bell pepper, diced
1/3 c Green onions, sliced
1 1/2 ts Cilantro, chpd
Salt and pepper
12 Flour tortillas, 6"
3 ts Oil, divided


In med bowl mix all ingreds except tortillas and oil. For each quesadilla, spread 1/4c cheese mixture onto 1 tortilla, top with another tortilla, pressing down lightly. Heat 1/2t oil over med heat, add quesadilla and cook 4 mins until lightly browned and filling is heated through, turning once. Repeat with remaining ingreds. Serve with sour cream and tomato salsa.
