APRICOT-WALNUT TEA BREAD

Ingredients:

1 c. dried apricots (about 1/4 lb.)
1 1/2 c. boiling water
1 c. walnuts
2 1/2 c. sifted all-purpose flour
3 tsp. double-acting baking powder
1/2 tsp. salt
1 egg
1/2 tsp. vanilla extract
1 c. sugar
1/4 c. salad oil


Prepare the fruits and nuts; using scissors, snip the dried apricots in small pieces. Add boiling water; let cool. Preheat oven to 350 degrees. Sift flour, baking powder, salt. In bowl, combine egg, vanilla, sugar and oil. Beat until well blended. Gradually add apricot mixture. Continue beating. Add flour mixture all at once. Beat until smooth. Stir in nuts. Turn batter into greased 9x5x3 inch loaf pan. Bake 60-65 minutes.

BANANA TEA BREAD:
Use same recipe, substituting 1 1/4 mashed ripe banana and 1/2 cup milk for dried apricots and boiling water.
