Apple Coconut Cupcakes



Ingredients:
1 pkg. yellow cake mix
1 tsp. cinnamon
1/4 tsp. nutmeg
1 1/2 c. shredded coconut
3 c. chopped apples, pared and cored



Preparation:
Pare and core apples and chop coarsely. Add cinnamon and nutmeg to cake mix, then prepare as directed on package. Fold in coconut and chopped apples. Fill greased or paper lined muffin tins 3/4 fill with batter. Bake at 350 degrees for 20-25 minutes. Frost with favorite butter frosting or leave plain. Makes 24 cupcakes.
