Coconut Cupcakes



Ingredients:
4 eggs
1 3/4 c. sugar
1 c. flour
1 c. oil
1 c. coconut, thinly shredded
1 tsp. lemon



Preparation:
Beat the eggs with sugar. Add the oil, lemon and flour. Beat well. Fold in the coconut. Pour mixture into cupcake forms and bake at 350 degrees for 20 minutes
