Chilled Berry Soup


1 pt Blueberries
1 pt Strawberries; hulled and coarsely chopped
1 c Raspberries
2 md Peaches or nectarines; chopped
4 c Raspberry or cranberry juice; made from concentrate
1/3 c Dry red or white wine
Juice of 1/2 lemon
1 ts Cinnamon
1/2 ts Ground allspice
1/4 ts Ground nutmeg
Brown sugar; to taste if needed
Strawberries; sliced for garnish


Combine all ingredients except the last two in a large soup pot. Bring to a boil, then cover and simmer over medium heat for 10-15 minutes, or until the fruit is tender. Taste to see whether a bit more sweetness is needed, and add brown sugar accordingly--depending on the sweetness of the fruit and the fruit juice, you may not wish to add additional sweetness at all, or very little. Allow the soup to cool, then chill thoroughly. Garnish each serving with a few slices of strawberry.
