Frosty Frozen Fruit Salad


1 qt. (4 c.) buttermilk
3/4 c. sugar
1 tsp. almond extract
1/8 tsp. salt
Canned peaches
Fresh or frozen whole strawberries
Fresh or frozen blueberries


Line 24 regular muffin cups with foil baking cups. Cut peaches and strawberries and place equal amounts of each along with the blueberries into each cup. In large bowl, combine buttermilk, sugar, almond extract and salt; mix well. Pour equal amounts over the fruit lined cups. Gently lift the fruit just to mix the colors in the buttermilk mixture. Freeze until firm. To serve, let stand at room temperature 10-15 minutes before removing foil liner. Serve on leaf of lettuce.
