Baked Oatmeal


1/2 C oil
3/4 C sugar
2 eggs, beaten
3 C Gluten-free oatmeal
1 tsp. baking powder
1 tsp. salt
1/2 tsp. cinnamon
1 C milk
1 tsp. vanilla


1. Mix oil, sugar and eggs.

2. Add oatmeal, baking powder, salt, cinnamon, milk and vanilla.

3. Pour in to a 9X9 pan. Bake 350 for 30 minutes.

Serve warm with milk. Can refrigerate leftovers to serve another day.
