Banana Muffins
Ingredients:
• Top of Form
• 1 1/2 cup gluten-free flour blend*
• 1/2 cup brown sugar
• 2 tsp baking powder
• 1 tsp cinnamon
• 1/2 tsp xanthan gum
• 1/4 tsp salt
• 1/4 cup melted butter
• 2 eggs
• 1/3 cup milk**
• 1 cup mashed ripe bananas (2 bananas)
• 1/3 cup chopped walnuts (optional)
• 1/3 cup raisins (optional)
• 1/3 cup unsweetened coconut flakes (optional)

Preparation:
1. Preheat oven to 375 F.
2. Combine gluten-free flour mix, brown sugar, baking powder, cinnamon, xanthan gum, and salt.
3. In a large bowl, combine melted butter, eggs, milk, and banana. Add in dry ingredients. Stir in chopped walnuts, raisins and coconut, if desired.
4. Spoon into oil sprayed muffin pan.
5. Bake at 375 degrees for 40 minutes or until a toothpick inserted in the center comes out clean.
Makes 12 muffins.
FAT-FREE: Replace oil with applesauce.
EGG-FREE: Omit eggs. Increase baking powder to 1 Tbsp.
