Bodybuilder's French Toast

Ingredients:

8 egg whites
2 whole eggs
salt
cinnamon (optional)
vanilla (optional)
2-3 slices of dry bread

Preparation:

1. In a blender, mix all but the bread.

2. Pour egg mixture into a large, medium-hot skillet that you've sprayed with olive oil (trying to use those "good fats").

3. Break the bread up into small chunks and scatter over the egg mixture.

4. Cover the pan and let it cook over medium heat until the bottom is set and slightly brown.

5. Flip it over like you would an omelet or pancake.

6. Let it cook until that side is also brown.

7. Slice in wedges. Depending on your caloric/carb needs, you can serve it with applesauce or other fruit puree or garnished with sliced berries. The ratio of eggs and bread can be adapted to meet your nutritional needs. As it is here, it serves me and my wife with my eating a larger portion.

Tip: if you are watching your carbs, a great "syrup" for pancakes, French toast, and waffles is the fiber supplement Metamucil. Yes, it is GF! Use the sugar-free kind. Mix it with less water and let it "thicken" a little. Heating it up also makes it thicker. Pour it on, or if you get it really thick, spread it like jelly.
