Cheese Blintzes

Ingredients:

Crepe:
1 cup gluten free flour blend
1 cup milk
dash of salt
4 whole eggs
1 Tablespoon oil
Cheese Filling:
1 lb. farmer cheese
1/2 cup sugar
1 teaspoon vanilla sugar
3/4 Tablespoon lemon juice
1/2 cup vanilla yogurt


Preparation:

1. blend all crepe ingredients until smooth.

2. pour desired amount into hot, slightly greased small frying pan.

3. tilt pan gently in all directions to get crepe batter evenly distributed in pan.

4. cook on medium flame.

5. when bottom is lightly golden turn over crepe for reverse side to get done.

6. remove from pan and let cool.

7. repeat, untill mixture is finished.

8. mix all cheese filling ingredients with fork until smooth.

9. drop a Tablespoon full of filling in center of each Blintz crepe.

10. smooth and flatten filling till 3/4" away from end of crepe.

11. bend in about 1" of right and left ends from crepe toward center.

12. roll bottom of crepe to top, to form blintz.

serve warm or cold.
