Vegetarian Chili


1/2 cup diced carrots
1/2 cup diced onion
2 cloves garlic
15 ounce can red beans, rinsed and drained
15 ounce can diced tomatoes
8 ounce can tomato sauce
1/4 cup diced green pepper
1 Tbsp chili powder
1/2 tsp cumin
1/2 tsp oregano
1 bay leaf
pinch of celery seed
salt and pepper to taste


1. Cook carrots and onions in pan with a little water until onion is translucent.

2. Add garlic and cook briefly.

3. Add beans, tomatoes, green pepper and seasonings.

4. Bring to a boil and simmer for 30 minutes or more.

Makes about 5 cups.
