Lemon Vegetable Rice Pilaf


1 tablespoon olive oil
1/2 cup chopped onions
1 cup frozen mixed vegetables
1 tablespoon GF chicken bouillon
1 teaspoon grated lemon zest
2 tablespoons lemon juice
Salt to taste
Pepper to taste
2 cups uncooked, brown or white, instant rice


1. Heat pan on stovetop. Add olive oil. When oil is hot, add onions and mixed vegetables. Saute until onions are soft. Remove from heat.

2. Add remaining ingredients, except rice, to pan.

3. Proceed with instant rice instructions on box for 4 servings (2 c. uncooked rice), using pan with vegetable mixture. If cooking in microwave, transfer vegetable mixture to microwave dish and proceed with microwave instructions on box for 4 servings (2 c. uncooked rice).
