Roasted Summer Squash

Ingredients:

1 zucchini, sliced
1 yellow squash, sliced
1 small onion, diced
1 tomato, diced
1 tsp Italian seasoning
(1/2 tsp parsley flakes
1/4 tsp basil leaf
1/4 tsp ground oregano
1/8 tsp garlic powder)


Preparation:

Combine squash, onion, tomato, and herbs in a 11/2 quart casserole dish and bake at 350 F for 1 hour.

Serve with hot rice.
