Banana Nut Bread

Ingredients:

Top of Form
1/3 Cup Shortening (or margarine)
1/2 Cup Sugar
2 Eggs
1 1/4 Cups Flour - Bette Hagman - Gluten Free Four Flour Blend
1/2 Cup Montina Flour - Amazing Grains
1 Tsp Baking Powder
1/2 Tsp Baking Soda
1/2 Tsp Xanthan Gum
1/2 Tsp Salt
1 Cup Mashed Ripe Bananas
1 Cup Chopped Walnuts

Preparation:

1. Cream together shortening and sugar; add eggs and beat well.

2. Sift together dry ingredients; add to creamed mixture alternately with banana, blending well after each addition. Stir in nuts.

3. Pour into well-greased 9 1/2 x5x3-inch loaf pan. Bake in moderate oven (350 degrees) 40 to 45 minutes or till done. (Test for doneness with a toothpick at 40 minutes.)

4. Remove from pan; cool on rack.
