Coconut Macaroons


2 egg whites
1/3 c. sugar
2 tbsp. flour or gluten free rice flour
1/4 tsp. almond extract
2 c. coconut


In medium bowl, beat egg whites lightly. Add sugar, flour, salt and almond. Blend well, stir in coconut; drop by tablespoons. Bake at 325 degrees. Remove immediately. Cool. Makes 12 cookies.
