Chocolate Cake


1/3 cup shortening
1 cup sugar
2 eggs
1/2 tsp vanilla
1 cup gluten-free flour blend*
1 tsp xanthan
1/4 cup baking cocoa
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
2/3 cup hot water
1/2 tsp vinegar


1. Cream shortening and sugar. Beat in eggs and vanilla.

2. Combine flour, xanthan, cocoa, baking powder, baking soda, and salt in a separate bowl. Add to creamed mixture. Mix well. Add water and vinegar, stir in quickly.

3. Pour in greased and rice floured 9 inch round cake pan. Bake at 350 F for 35 or until toothpick inserted in center comes out clean.

Frost with chocolate frosting when completely cooled.
