Green Beans and Butter


2 pounds fresh green beans
1/4 cup butter


Trim the ends from green beans. Cut beans into 1/2-inch piece; cook the beans in large kettle in boiling water. Add salt, if desired. Cook until tender, but not limp. Drain beans; return to skillet. Toss them in 1/4 cup butter over low heat until well coated. Add salt and pepper to taste; transfer the beans to a heated cooking dish and sprinkle with minced parsley.
