Tomato Green Bean Salad

Ingredients:

1 lb. fresh green beans
1 bunch scallions, minced
1 lg. tomato, chopped or (cherry tomatoes, cut 1/2)
1/2 c. olive oil
1/4 c. red wine vinegar
1 1/2 tsp. soy sauce
1/2 tsp. ginger
1/2 tsp. sugar
1 clove garlic, minced
1/8 tsp. salt
1/4 tsp. pepper


Preparation:

Trim beans, steam lightly until crisp tender, combine in bowl with scallions and tomatoes. In small bowl, whisk together remaining ingredients. Pour over vegetables and mix well. Chill for at least 4 hours.
