Bramble Muffins


2 1/2 c Flour; all-purpose
3/4 c Sugar
2 ts Baking powder
1/2 ts Salt
2 Eggs
4 tb Butter; melted 1 1/4 c Milk
2 c Brambles (blackberries) or other available fruit


Sift together the dry ingredients. Beat together the eggs, milk and the melted butter. Stir into the dry ingredients and fold in the brambles. Line individual cake tins or deep bun tins (muffin tins) with paper cake cases and spoon the mixture into each, to come three-quarters up the sides.

Bake in a preheated moderate oven (350°F / 180°C / gas 4) for 30-35 minutes. Leave a minute or two before serving, hot, with butter.
