Never Fail Mayonnaise



Ingredients:

1/2 ts Sugar
1/2 ts Dry mustard
1/4 ts Salt
Dash of pepper
1 Egg white
1 c Vegetable oil
4 1/2 ts Vinegar



Preparation:

Stir sugar, dry mustard, salt, and red pepper together in bowl. Add egg white; beat well with rotary beater. Beating constantly, add oil, a little at a time. Continue beating while adding 1 1/2 teaspoons vinegar, then the remaining 3 teaspoons vinegar.
To prepare in blender. Put sugar, dry mustard, salt red pepper, and egg white into blender. Cover; run blender about 2 seconds. Just turning blender on and off with each addition, blend in half the oil, 2 tablespoons at a time. (Stir in last portions of oil with long handled rubber spatula, if neaessary.) Blend in 1 1/2 teaspoons vinegar, then 6 tablespoons oil, 2 tablespoons at a time. Continue blending in remaining 3 teaspoons vinegar, then remaining 2 teaspoons oil.
