Red Pepper Mayonnaise


1 Roasted sweet red pepper
1 Clove garlic, minced
1 ts Dijon mustard
1/4 ts Hot pepper sauce
1/2 c Mayonnaise


In food processor, or blender, combine red pepper, garlic, mustard and hot pepper sauce; puree. Add mayonnaise and process to blend. makes about 1 cup.
ROASTED PEPPERS: To roast peppers, broil or grill 4 inches from heat, turning to brown all over, for 15 minutes or until puffed and charred. Or roast in 375F oven for 30 minutes or until lightly browned. Let cool.
