Red Pepper Flake Mayonnaise



Ingredients:

2 tb White wine vinegar
1/2 ts Red pepper flakes
1 Egg yolk
Juice of 1/2 md Lemon
Salt
1 c Safflower or vegetable oil
White pepper



Preparation:

In a small saucepan, combine the vinegar and pepper flakes. Bring to a boil and boil until 1 T liquid remains. Reserve.
In a food processor fitted with a steel blade, blender, or a bowl and a whisk, combine egg yolk, lemon juice, and a pinch of salt. With the motor running, slowly pour the oil through the feed tube until the mixture is thick and smooth. ( Use the same procedure with the bowl and whisk. Stir in the reserved pepper flake liquid, and correct the seasoning to taste with salt, white pepper and additional lemon juice. Refrigerate, covered until needed.
