Swedish Pancakes

Ingredients:

1 medium egg.
3/4 cup of milk.
1/2 cup of all-purpose flour.
2 tablespoons of melted butter.
1 tablespoon of sugar.
1 teaspoon of baking powder.
1/4 teaspoon of salt.
Shortening or butter.
Lingonberry jam.
Sour cream.


Preparation:

Over a medium heat, preheat a Swedish pancake pan.

In a suitably sized bowl, beat the egg; then stir in the milk, flour, sugar, baking powder and salt until the batter is smooth.

Stir in the melted butter.

Grease cups in hot pan with shortening or butter.

Spoon 2 rounded tablespoons of batter into each greased cup.

Cook for approximately 60 seconds on each side or until golden brown.

Serve immediately with lingonberry jam and sour cream.
