Peach Pancakes


2 Tablespoons butter
1 lg. can peaches, drained
1/4 teaspoon cinnamon
1 T. granulated sugar
1 cup milk
3 large eggs, at room temperature
3/4 cup all-purpose flour
2 Tablespoons granulated sugar
Confectioners' sugar


Preheat oven to 400. In a medium-size ovenproof skillet, melt the butter. Add

to the butter, peaches, cinnamon and sugar. Saut, peaches until slightly warm

and then remove from the heat. Whisk together the milk, eggs, flour, and

sugar. Pour egg mixture over the peaches and immediately place the skillet in

the oven. Bake for 30 to 35 minutes or until the top has lightly browned.

Remove from oven, let set. Pancake will sink a little. Sprinkle confectioners'

sugar on top of pancake and garnish with your favorite vanilla ice cream.
