Corn Pancakes


2 cups sifted flour
2 1/2 teaspoon baking powder
1/2 teaspoon salt
1 egg
1 1/2 cup milk
2 tablespoons cooking oil


Sift together flour, baking powder and salt into a mixing bowl. Add egg milk and

oil. Mix just until smooth. Stir in 2 cup whole-kernel corn, drained .

Pour 1/4 cup batter onto hot lightly greased grilled for each pancake. When

bubbles appear; turn over.

Makes 12-14 pancakes
