Bacon & Cheese Oven Pancake


6 slices bacon
1 c. flour
2 tbsp. sugar
1 tbsp. baking powder
1/2 tsp. salt
1 egg, beaten
3/4 c. milk
1 c. shredded cheese


Cook bacon until crisp; drain. Save 3 tablespoons of drippings. Crumble bacon and set aside.

In bowl stir flour, sugar, baking powder and salt. Combine egg, milk and bacon drippings. Then add to dry ingredients. Beating until smooth. Stir in bacon. Spread batter evenly in greased and floured 15 x 10 x 1 inch baking pan. Bake at 425 degrees for 15 minutes. Then sprinkle cheese and bake until cheese is melted. Pour warm syrup over pancakes after served on plates. Also good with eggs on top.
