Beef Pancake


2 onions, chopped fine
1/4 c. chopped parsley
2 or 3 c. diced leftover roast beef or 1 lb. hamburger, browned
3 tbsp. melted butter
2 c. milk
3 eggs, beaten
1/2 c. flour
Tomato sauce


Mix all ingredients except tomato sauce. Pour into a shallow 8 x 8 inch buttered pan or casserole dish. Bake 25 to 30 minutes until pancake is golden and puffy. Serve with tomato sauce or ketchup.
