Blue Cheese Potato Pancakes

Ingredients:

12 oz. potatoes, grated
1 clove garlic, minced
1 sm. onion, chopped
1 tsp. cornstarch
1 egg
1/4 c. flour
8 oz. bleu cheese, crumbled
1 tsp. white pepper
1 tsp. salt


Preparation:

Grate potatoes, rinse, drain. In large bowl mix potatoes, garlic, onion, egg, flour, cornstarch, half the cheese, salt and pepper. Preheat large skillet. Coat skillet with butter and oil. Place 1/4 cup portions of potato mixture into skillet, flatten slightly. Fry until golden brown, turning once.

Add butter and oil to skillet as needed. For each serving sprinkle 1/4 of cheese onto each plate. Top with 3 pancakes per serving.
