Hobbit Pie

Ingredients:

1 16 oz. package semi-sweet chocolate chips
6 tablespoons sugar
6 tablespoons milk
4 eggs
1 teaspoon vanilla
1 envelope unflavored gelatin
1/4 cup cold water
1 8 oz. tub of light (low-calorie) whipped topping such as Cool Whip light
2 9-inch pre-packaged Oreo pie crusts (or make your own from Oreo cookies)


Preparation:

Add the sugar and milk to the chocolate chips and place over low heat until the chips are completely melted.

Using a wire whisk, beat four whole eggs into the chocolate mixture.

Dissolve 1 envelope of unflavored gelatin in the 1/4 cup of cold water. Let stand for about two minutes until the gelatin is thickened, then add to the chocolate mixture.

Add 1 tsp vanilla to the chocolate mixture.

Fold in 8 oz. of light whipped topping.

Pour into two 9-inch Oreo pie crusts.

Let chill for at least three hours or until set.
