3-Cheese Spinach Pie


1 c. grated part-skim Mozzarella
1 c. grated Swiss cheese
1/2 c. grated Parmesan
1 deep 9-inch unbaked pie crust
4 eggs
2 c. lowfat or skim milk
1/4 tsp. grated nutmeg
1/4 c. chopped sweet red or green pepper
1/2 c. frozen chopped spinach, thawed and squeezed to remove excess moisture


Preheat the oven to 350 degrees. Sprinkle the cheeses into the unbaked pie crust. Put the eggs, milk and nutmeg in a bowl and whisk them together. Add the chopped pepper. Scatter the spinach over the cheese in the pie crust. Carefully pour the egg mixture into the shell. Bake the pie until it is puffy and browned, about 45 minutes. Serves 8.
