Island Pork Chops


1 (8 ounce) can Pineapple Chunks with Juice
1 tablespoon Cornstarch
2/3 cup Chili Sauce
1 tablespoon Brown sugar
1/8 teaspoon Ground Cinnamon
1 pound Boneless Pork Loin, cut into 4 chops
1 tablespoon Vegetable Oil
Hot Cooked Rice


1. Add pineapple chunks and juice to small bowl.

2. Stir in cornstarch until dissolved.

3. Stir in chili sauce, brown sugar, and ground cinnamon. Set aside.

4. Use mallet to slightly flatten pork loin chops

5. Heat oil in heavy skillet over medium heat.

6. Add pork chops to skillet.

7. Brown 3 minutes per side.

8. Drain off excess far and juices.

9. Pour pineapple mixture over chops. Reduce heat to low.

10. Cover and simmer 5 minutes, or until pork is cooked, turning once.

11. Serve pork and island sauce with white or brown rice.
