Apricot Glazed Pork Chops


4 pork rib or loin chops, 1/2 inch thick
1 tsp salt
1 TBS oil
1.3 cups (1 lb can) apricot halves (drain and reserve the liquid)
Reserved apricot liquid, add water to make 1.5 cups
2 TBS cornstrach
2 tsp lemon juice
2 TBS slivered almonds


1. Sprinkle chops with salt

2. Brown the pork chops in oil on both sides in a fry pan

3. Add 1/2 cup of the apricot liquid

4. Cover the pan, reduce the heat and simmer for ten minutes

5. Combine the cornstarch and the remaining 1 cup of apricot liquid and Add to the chops

6. Continue simmering, stirring frequently, until the liquid thickens

7. Add apricots and almonds, cover and continue to simmer for 10 minutes
