Lemony Pork Chops


4 pork loin chops 1-1/4 inches thick
1/4 cup lemon juice
2 tablespoons vegetable oil
2 tablespoons water
2 tablespoons snipped parsley
2 teaspoons chopped chives
1 teaspoon salt
1 teaspoon crushed dried tarragon
1 teaspoon grated lemon peel
1/2 teaspoon crushed dried savory


1. Simmer the lemon juice, oil, water, parsley, chives, salt, tarragon, lemon peel, and savory in a small pan for 3-4 minutes, stirring occasionally (marinade)

2. Let the mixture cool

3. Place the pork chops in a plastic container, pour the marinade over the pork and close the container

4. Marinate the pork chops in the refrigerator for 6-8 hours or overnight, turning occasionally to distribute marinade

5. Drain the pork chops and reserve the marinade

6. Grill the pork chops over medium coals for about 8 minutes

7. Turn the pork chops and grill for about 8 more minutes, brushing occasionally with the reserved marinade
