Pork Chops with Italian Sausage Sauce


Salt and pepper
1 tbs. olive oil
2 sweet Italian sausages
1 medium onion
1/4 lb sliced mushrooms
1 minced or pressed clove garlic
1/4 cup dry red wine
1 (8 oz) can tomato sauce
1/2 tsp Italian herb seasoning


1. Sprinkle pork chops with salt and pepper

2. Brown the pork chops well on both sides in oil in a large frying pan

3. Remove the pork chops from the pan

4. Pour off and discard all but about 1 tablespoon of the pan drippings

5. Remove the casings from the sausages and crumble the meat into same pan

6. Mix in the onion and mushrooms

7. Cook stirring, until onions and sausage brown lightly

8. Mix in garlic and return the pork chops to the pan, spooning sausage mixture over them

9. Pour in wine and tomato sauce

10. Sprinkle with herbs and Bring to boiling

11. Cover the pan, reduce the heat, and simmer for 35 to 40 minutes until the pork chops are tender
