Yukon Gold Cheesy Potatoes


2 lbs. (about 6-7 medium) Yukon gold potatoes, grated with skin on
16 oz. sour cream
1/4 c. parsley
Freshly ground black pepper to taste
2 T. olive oil
1 (10 oz.) can cheddar cheese soup
1 (10 oz.) can cream of mushroom soup
1/2 c. butter, melted
1 small can green chiles
1/2 c. onion, chopped


Preheat oven to 350. After grating potatoes, toss with parsley and black pepper in large bowl. Heat olive oil in large skillet. Cook potatoes in skillet until crispy and brown. Remove pan from heat.

Spray 9x13 baking dish with cooking spray. Place crispy potatoes in baking dish and pour buttery spread over. Mix remaining ingredients in large bowl, pour overtop and mix with potatoes. Bake in oven at 350, uncovered, for 1 - 1 1/2 hours.
