Cheesy Scalloped Potatoes


2 Tbsp. butter or margarine
3/4 c Velveeta cheese (or other precessed cheese)
2 Tbsp. all-purpose flour
3 medium potatoes, peeled and sliced
Salt & pepper to taste
1/2 c Cheddar cheese, shredded
1 1/4 cups milk


Make sauce for scalloped potato recipe: Melt butter/margarine. Stir in flour, salt and pepper. Add milk all at once. Cook, stirring, unitl thickened and bubbly. Stir in Velveeta/processed cheese until melted. Remove from heat.

Process: Place half of the sliced potatoes in a greased baking dish/casserole. Cover with half of the sauce. Repeat layers. Sprinkle top with cheddar cheese.

Bake, covered, in a 350F degree oven for 35 minutes. Uncover and bake 30 minutes more or until potatoes are tender. Let stand for 5 minutes. Serve.
