Scalloped Potatoes and Ham


3-4 medium potatoes
1 cup cooked ham, diced
1 can (10 oz) condensed cream of chicken soup
1 soup can of milk
2-3 tablespoons chopped dried onion
1/2 teaspoon salt
1/4 teaspoon pepper
1-2 cups cheese, shredded*


Peel and thinly slice potatoes. Dice ham.

Combine cream of chicken soup and milk, stir until smooth. Stir in onion, salt, pepper, and shredded cheese.

Layer potatoes, ham, and sauce in a baking dish. Cover and bake at 350 degrees for 1 hour. Remove cover and continue to bake 30 minutes longer or until potatoes are tender and top is browned.

Allow potatoes to stand 5-10 minutes before serving.

* In this recipe, and all scalloped potatoe recipes, experiment with a variety of your favorite cheese such as Havarti, mozzarella, Swiss, Cheddar, etc. The more strongly-flavored cheeses will require less to create a tasty, cheesy dish.
