Scalloped Potatoes with Vegetables and Ham

Ingredients:

1 lb. potatoes, peeled and sliced
2-1/2 cups cheese (use any cheese you like), shredded and divided
1 cups frozen peas and carrots mix
1 cup cooked ham, diced
1 Tbsp. butter, melted
2 cups milk


Preparation:

Place a layer of sliced potatoes in a buttered/oiled casserole dish. Add a layer of vegetables and ham. Repeat with another layer. Combine melter butter and milk and pour over all.

Bake at 350F for 30 - 45 minutes. Top with shredded cheese and return to oven just until cheese is melted and slightly browned.

Serve.
