Oven Baked Hash Browns


3 large potatoes
2 medium onions
1 1/4 cups water
2 tablespoons olive oil
1 teaspoon garlic, minced
1/4 teaspoon paprika
1 teaspoon salt
1/2 teaspoon freshly ground pepper


Preheat oven to 400 degree's.

Wash potatoes. Leaving skins on, cut into 1/4 inch cubes. Peel and cut onions into small chunks. Put potatoes, onions and water into a 13" x 9" baking pan. Cover tightly and bake for 25 minutes. Drain well.

In a large bowl, combine olive oil, garlic and paprika. Add potato and onion mixture. Toss to coat.

Return mixture to baking pan, spreading it out in an even layer. Increase heat to 425 degree's. Return baking pan to oven and bake uncovered for another 20 to 30 minutes, turning every 5 minutes to brown. Add salt and pepper, and serve.
