Stuffed Baked Sweet Potato


6 med. sweet potatoes
2 tbsp. butter
1 c. shredded pineapple
1/4 c. chopped walnuts
1 tsp. salt
12 large marshmallows
Juice of 1 orange


Wash potatoes. Bake in 350 degree oven until done but still firm. Cut in half lengthwise and scoop potato flesh out of skins.

Mash scooped out potatoes, adding butter, salt and orange juice. Stir in pineapple and walnuts. Refill potato half-shells with mixture. Cut each marshmallow in half and place two halves on top of each potato half-shell. Place in hot oven until marshmallows are heated through and slightly browned on top.
